Millet Khichdi, in particular, combines the goodness of millets and lentils to create a dish that is rich in protein, fiber, and complex carbohydrates.
Rich in Protein and Fiber: Bajra is naturally high in protein and fiber, making it a fantastic choice for those looking to improve digestion and boost energy levels. The lentils added to the dish also contribute to its protein content, making Millet Khichdi a well-rounded meal.
Gluten-Free: Millets like bajra are naturally gluten-free, making this dish an excellent option for those with gluten sensitivities or anyone looking to cut down on gluten intake.

Rich in Micronutrients: Millet Khichdi is packed with micronutrients such as iron, magnesium, calcium, and phosphorus, which contribute to improved bone health and overall well-being.
The Taste and Texture of Millet Khichdi
Millet Khichdi has a rustic, earthy flavor that stands out from the traditional rice-based khichdi. The slight chewiness of the millet, combined with the soft texture of lentils, creates a unique and satisfying bite. Spices such as cumin, mustard seeds, and turmeric give it warmth and depth of flavor, while vegetables like carrots, peas, and potatoes add a hint of sweetness and a crunchy texture.
Recipe for Millet Khichdi
Here's a simple recipe for Millet Khichdi that you can easily try at home:
Ingredients:
1 cup bajra (pearl millet)
½ cup yellow moong dal (split yellow lentils)
1 small onion (finely chopped)
1 tomato (chopped)
1 tsp cumin seeds
½ tsp mustard seeds
1 tsp turmeric powder
1 tsp ginger-garlic paste
2 cups mixed vegetables (carrots, peas, and potatoes)
3 cups water
Salt to taste
2 tbsp ghee or oil
Fresh coriander leaves for garnish
Instructions:
Rinse the bajra and moong dal thoroughly and soak them separately for at least 2 hours.
In a pressure cooker, heat ghee or oil and add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions, and sauté until golden. Add ginger-garlic paste and cook for another minute.
Add chopped tomatoes and cook until they soften.
Add turmeric powder and the mixed vegetables, and sauté for a couple of minutes.
Drain the soaked bajra and moong dal and add them to the pressure cooker. Stir well.
Add 3 cups of water and salt to taste, and stir everything together.
Close the pressure cooker lid and cook for 4-5 whistles or until the bajra and dal are soft.
Once done, let the pressure release naturally, then open the lid.
